TESTING NOTES:

Nose:  “Winey and rich, softly oaked with an almost oily peatiness. Fabulous heathery depth with an almost flower-scented sweetness, this is the kind of malt that would send bees into a frenzy”

Palate:  “Fabulously fat and oily and then a massive wave of intensely sweet malt followed by wave upon wave of the most gentle peat. Thick, intense, uncompromising and chewy”

Finish:  “Long, peay and intense with heather and oak. Some late cocoa adds further depth”

 



A masterful single malt with a thorough Northern pedigree. An Orcadian Masterpiece named in honour of these wonderful islands’ best known landmark – the huge stack of sandstone that towers out of the Island of Hoy. 
 
In selecting the whiskies for Old Man of Hoy we have chosen casks of whisky that have been distilled at Scotland’s most northerly distillery, sited overlooking Scapa Flow. These are robust well peated malts that have been softened and gently sweetened by the effects of the Sherry Casks in which they have been aged. We like to think of these as traditional whiskies, perhaps whiskies from the old school as whisky writer Jim Murray described The Old Man when writing in Whisky magazine. The effect of the sherry is not so great that it swamps the subtle flavour notes in each cask and the complete lack of any heavy filtration, let alone chill-filtration means that all of the natural oils, esters and fats have been left in the whisky. And, because each cask is bottled individually each will have its own contrasting and subtle flavours to enjoy. Old Man of Hoy labels carry a bottling reference code for every cask, so you will know if it is a cask you have already enjoyed. But be warned, because we only bottle single casks the number of bottles of each batch of The Old Man of Hoy is strictly limited
